The result is a bright clear spirit with a hint of sweetness that works well in a wide range of temperatures and cocktails. In each sip you get the sense of the sandy soils, intense sunshine, and the tropical rain from where it was created.

The trees that provide the nectar require no fertilizers, herbicides, or pesticides. No artificial irrigation is used so fresh water can be better utilized.  Nectar is collected from the small farms where men work in tree tops to collect the nectar by hand.  The alcohol is produced naturally without added yeasts and distillation is done in small batches by local craftsman in a husk fired still.

Papo Js is made in the Philippines Islands from 100% pure coconut nectar collected by hand from the flowers of coconut trees. Legend has it that centuries ago, a Spanish priest learned the process of fermenting coconuts. The nectar ferments naturally without added yeasts, then is distilled in copper stills to make a clear, 80 proof spirit. Once it passes a certain point, it’s distilled in copper stills and fired by coconut shell husks. Eventually it will become an 80-proof spirit. If it’s not distilled, it becomes a vinegar that sells at local markets. Because it ferments naturally, Papo Js is processed and bottled at Dory’s Distillery, Inc. in the Philippines.
